Royal Icing

Ingredients:
OR
Water ½ pt 4 tabsp
Albumen Powder 1 ¾ oz ½ oz
Icing sugar 3 ½ lb 1 lb

Method:

By Machine –
1) Add albumen powder to the water and mix thoroughly
2) Strain the mixture into the mixing bowl and add the icing sugar
3) Beat on the slowest speed for 3 minutes to soft peak (coating and line piping consistency) OR 4 minutes to full peak (piping consistency for shells, scrolls etc.). Times are approximate, as this depends on the type of mixer used and the speed of beating

By Hand –
1) Mix the albumen as above and strain
2) Add the icing sugar gradually throughout the beating process
3) To reach soft peak consistency it will take approx. 15 minutes
