Ingredients
- 8oz Butter (softened)
- 8oz Caster Sugar
- 12oz Sultanas
- 4 Eggs
- 12oz Plain Flour
Method
- Place sultanas in saucepan, cover with cold water, bring to the boil, strain, dry and leave to go cold
- Cream butter and sugar until light and creamy
- Beat up eggs and slowly add to creamed mixture
- Fold in flour and lastly sultanas
- Put mixture into 8” round lined cake tin
- Bake at 140oC for ½ hour, turn down temperature to 130oC and continue to bake for a further 2 hours (approx). Keep covered during baking.
