Mexican Paste

Ingredients:

8oz (250g) Icing Sugar
3 x 5ml Gum Tragacanth
1 x 5ml Liquid Glucose
6 x 5ml Water (warm)

Method:

1) Sieve icing sugar and gum trag
2) Melt liquid glucose in warm water
3) Add liquid to sugar – mix at low speed until white and stringy (5 minutes)
4) Knead together
5) Cut in 4 pieces – put each in plastic bag, then put all in a plastic bag
6) Leave for 24 hours before using
