Indulgent Chocolate Brownies

These brownies are a super indulgent chocolatey hit. The difference between an ‘ordinary brownie’ and a fabulous ‘indulgent brownie’ is the quality of the ingredients you use! Use as good a quality dark chocolate as you can (with minimum 70% cocoa content) and a good ‘proper’ butter.

Chocolate Brownie Ingredients

  • 250g Butter
  • 200g Dark Chocolate (good quality)
  • 80g Cocoa Powder
  • 65g Plain Flour
  • 350g Caster Sugar
  • 1 tsp Baking Powder
  • 4 Eggs
  • (Optional) 100g Macadamia Nuts (halfs / broken)

How to make chocolate brownies

Preheat the oven to 180oC / 350oF / Gas 4 and line a traybake / swiss-roll tin (12” x 8”)

Melt the butter in a large bowl in the microwave

Stir the chocolate pieces into the hot butter until the chocolate is all melted

If adding macadamia nuts, add them to the melted butter / chocolate

Sieve the cocoa powder, flour, sugar and baking powder and stir well together

Add the dry ingredients and eggs (beaten) into the chocolate mixture

Mix everything together until the mixture is a silky consistency

Pour into the baking tray and bake for 20 – 25 minutes

Remove from oven when the brownies are still slightly springy so that they will be gooey in the middle – remember that chocolate always firms up at room temperature.

Cut into bite size portions for ‘coffee treats’ or larger squares for dessert portions and enjoy with some ice-cream!

Tip: Leave the brownies in the tin to cool so that it doesn’t crack / break when removing or cutting – unless you are eating them immediately!
